Blackcurrants are such a special little gem of a fruit with so much flavour packed into that tiny area.

If you’ve only tried cordials or jams made with blackcurrants, it’s time to buy (or forage) some fresh ones and try them straight from the bush.

These pies are made from feta and filo pastry – always work perfectly together – and the blackcurrants are made into a little jammy sauce which sits on top of the feta. They’re sweet, sharp, salty, soft and crunchy – a win all round!

What you’ll need to cook this recipe

  • Blackcurrants – these are best fresh, but you can use frozen if it’s out of season.
  • Sugar – you can use either caster or a light brown sugar
  • Filo pastry – of all the pastries, filo is the one I recommend buying from the shop. It’s a bit of a faff to make!
  • Feta – if you can get your feta in 200g blocks, that’s perfect. Otherwise, you’ll need to cut into equal sized pieces.
  • Butter – this is brushed over the pastry to give those incredible crunchy layers and golden colour. You can also use olive oil.
  • Hot honey – to drizzle over the pies after cooking. You can buy this readily in supermarkets now, or make your own.

Feta and Blackcurrant Filo Pie

Sweet, sharp, salty and spicy – these feta and blackcurrant pies made with filo pastry have it all.

Ingredients
  

  • 200 grams blackcurrants
  • 2 tablespoons caster sugar
  • 270 grams filo pastry
  • 400 grams feta ideally 2 x 200g blocks, or cut into 2 equal portions
  • 20 grams butter melted
  • 2 teaspoons hot honey

Method
 

  1. Remove any stalks from the blackcurrants and place in a saucepan with 50 ml water. Put on a medium heat for 10 minutes until they are jammy. Add the sugar, stir, then remove from the heat and allow to cool slightly.
  2. Preheat the oven to 180 degrees Celsius.
  3. Lay the filo pastry sheets out on a work surface. Put one block of feta in the centre of one sheet. Spoon half of the blackcurrant mix over the top of the feta. Brush around the feta with the butter, then fold like a parcel around the feta. Take another sheet of pastry and brush all over with butter, then fold this around the feta like a parcel. Repeat with another sheet of feta.
  4. Do the same with the other piece of feta. You should now have two parcels. Place them on a baking tray and brush with more butter. Place in the oven for 25-30 minutes until golden and crisp.
  5. Remove from the oven, place on a plate and drizzle over the hot honey. Enjoy warm.
